One of the best things in the world is to come home from work to the smell of a great meal cooking. This super simple pot roast recipe has been a family favorite of ours for many years. The recipe gives directions for using a crock pot; however, it can easily be cooked in the oven as well. It is very tender and has an excellent taste. Enough for a family of four with leftovers for lunch the next day.
Ingredients: Three to five pound roast of choice such as rump, chuck or English. Approximately seven potatoes, ten carrots, and four stalks of celery, one package French onion soup mix, one teaspoon flour or corn starch and 1/2 cup of warm water.
Peel and wash potatoes then cut into pieces about the size you would cut for making mashed potatoes. Peel and wash carrots then slice the carrot, with each piece being about 1/4 inch thick. Wash and cut celery the same thickness as the carrots. Mix the vegetables together in a bowl.
In a crock pot, put 1/4 of vegetables in the bottom of the crock pot, and then put the roast over the vegetables. Using a fork, poke holes in the top and sides of the roast so juice can get inside the meat. Add remaining vegetables over the roast.
In a bowl mix the soup mix, flour or corn starch and the water. Stir well until the majority of the flour or corn starch no longer is clumped. Pour the liquid over the roast and vegetables. Hint-The ingredients uses soup mix for the onion, however, if your family is onion eaters feel free to add a small cut up onion to the vegetables.
If you will be cooking the roast while away from the kitchen, set the temperature to low and let cook for approximately eight hours. If want it done quicker, set the temperature to high and cook for approximately six hours. If you prefer the meat to be medium well, cook for approximately four hours in the crock pot on high temperature.
When ready to serve, turn off crock pot and transfer roast to a platter. Stir the vegetables and gravy light to coat all vegetables and transfer to a serving bowl. This pot roast recipe is so good and although directions are for crock pot, the same process can be used for oven by simply putting vegetables, meat and soup mix into a pan. Cook in the over at 350 degrees for approximately six hours. Serve with a nice green salad and hot buttered rolls for a delicious dinner your family will want on a weekly basis.
